Pastry Chef Franck Monnier has made a reputation for fusing his classic French training with the ingredients and flavors of the new world.
He took his unique approach to creating desserts to Four Seasons Hotel Miami as Pastry Chef where he supervised all-pastry production and created the delectable dessert menu for Acqua, the property's signature Italian Restaurant.
Prior to joining Four Seasons Hotel Miami, Monnier was previously employed by the Four Seasons Hotel in Chicago, Illinois and was pastry chef at Four Seasons Hotel Mexico City. He has also worked at La Dordogne restaurant in London, England, Boyer les Crayeres in Reima, France and Chabichou restaurant in Courchevel. The Four Seasons Hotel group is perhaps the finest collection of luxury hotels in the world and both of the hotels at which Mr.Monnier was employed received top industry awards for cuisine, including the Five Diamond Award from the American Automobile Association.
