Strangely, it never occurred to me that they didn't but recently, San Fransisco's Center for Culinary Development conducted a study investigate this.
According to this report and I quote "the cultural makeup of America has shifted and the national penchant for international flavors has grown beyond pizza and toward flatbread, spices have become a key tool in marketers' flavor arsenal."
This amazes me. To begin with, I think that any one of us could have saved the expense of the study and just told them - yes, of course Americans like spicy food. I haven't looked at any statistics (I will, later) but I imagine that the most popular restaurants in America are - in no particular order - Italian, Mexican, Chinese and Thai. None of these cuisines are known for being bland. Where do these studies start and who on earth finances them?
