This chap, who I believe is an architect, has plans for many sustainable businesses but I think his restaurant idea is a bit of a winner, actually.
I'm all for keeping costs down, after all. And he suggests that a building called a community ecological center is set up with, at its heart, a huge greenhouse. All manner of fruits and vegetables would be grown here, especially the tropical fruits and vegetables which have to be imported at great financial and pollution costs.
The produce from the greenhouse forms a basis for the meals served in the restaurant.
Now, you'd think that any left over food would go into a compost bin, but no. The suggestion is that it is added to a wormery for the worms to eat. The worms would then be fed to fish living in an aquarium on site and the fish would also ultimately be served in the restaurant.
And non-food debris, according to the article I was reading, will be processed by an anaerobic digester, a kind of processor in which micro-organisms break down the waste in an oxygen-free environment, producing biogas to heat the greenhouse and provide electricity.
Sounds great to me.
